Blueberry raspberry pancakes with 2 dressings ( vegan, paleo , refined sugar free, egg free, dairy free )

I make pancakes very rarely probably because my daughter always insists me on making crepes instead. This time I made both but only the more photogenic ones (pancakes) got in the pictures.

So what do you think? Don’t these just look marvellous! My pancakes are full of summery fresh taste and my secret ingredient kumquat gives such an amazing flavour to them.

Ingredients

Batter

1/2 cup freshly squeezed orange juice

1/2 cup coconut milk

1/2 cup almond flour

1/2 cup glutenfree all purpose flour

1 tbsp chia seeds

1 tbsp melted coconut oil

1/2 tsp sea salt

1/4 tsp vanilla bean powder

1 tsp baking powder

1/2 tsp baking soda

handful of raspberries

handful of blueberries

handful of mint leaves

2 kumquats cubed

 

Mix everything together and let rest at least 10 minutes.

After that panfry in coconut oil on both sides.

 

Matcha dressing

 

1/4 cup plant based yoghurt

2 tbsp lucuma powder

1 tbsp maca powder

1 tbsp matcha tea powder

1/4 tsp vanilla bean powder

 

Mix everything together

 

Strawberry jam

 

1 cup strawberries

2 passion fruits

1 tbsp maple syrup

2 tbsp chia seeds

1/4 tsp vanilla bean powder

 

Mix all together and let set for half an hour

 

I don’t like super thick and fluffy pancakes myself. This pancake batter allows you to decide whether ┬áto make thick and fluffy or thin and more crispy pancakes. Just add liquids if you prefer thinner ones. Anyhow I assure you are going to enjoy these pancakes in a whole new level of pleasure.
