Chocolate Drizzle Cookies ( gluten free, refined sugar free, vegan )

This chocolate cookie recipe is inspired by my daughter. She asked me to bake something unhealthy. For a change she said. I was like okei… if you consider organic butter unhealthy even rarely used…  That is the only ‘bad’  ingredient I was gonna use.  Anyway I was ready for the challenge.

I think I did all right since the cookies look pretty and delicious and the taste is very chocolatey. And they are actually not so bad for you…

Healthy lifestyle is not just about eating super healthy food  all the time. It’s about understanding that you can jump off that wagon every once in a while. You can indulge yourself with  a chocolate covered cookie and be happy. Yes there is butter in the dough but who cares! We are talking about treats here not the everyday stuff.

 

Kids love cookies. I know there is a big bunch of adult cookie lovers out there too!

Why not be like a child ? Take a bite of a gluten free chocolate cookie … or two and smile. You deserve it!

Ingredients for 30 or more cookies

 

  • 200 g organic butter  (or vegan margarine )
  • 3 dl erythritol and coconut sugar, half and half
  • 3/4 tsp vanilla bean powder
  • pinch of salt
  • 1 dl teff flour
  • 1 tsp baking soda
  • 2 dl sugar free chocolate chips
  • 2 dl oat flour
  • 1 dl rolled oats
  • 1 dl coconut flakes
  • 4 tbsp roasted dark cocoa powder
  • 1 tsp egg replacer ( i used Orgran no egg )
  • 2 tbsp lupin flour
  • 1 dl tapioca starch
  • 2 tbsp chia seeds

 

 

INSTRUCTIONS

 

  1. cream together butter and sugars
  2. start adding other ingredients
  3. stir the dough until all ingredients are properly mixed
  4. take tbsp sized balls of dough  (roll them between your hands to get pretty cookies )
  5. place them about 2 inches apart on baking sheet ( lined with parchment )
  6. bake for 12- 15 min on 180 C
  7. let cool
  8. if you want to drizzle them with melted chocolate use sugar free chocolate ( store-bought or make your own raw chocolate using my recipe )

 

 

 

AINESOSAT NOIN 30-40 KEKSIÄ

 

  • 200 g voita tai margariinia
  • 3 dl kookossokeria ja erythritolia, puolet ja puolet
  • 2 dl sokeriton suklaarouhe / hippu
  • 2 dl kaurajauho
  • 1 dl teffjauho
  • 1 dl kaurahiutale
  • 1 dl kookoshiutale
  • 3 tbsp kaakaojauhe
  • 1 tl kananmunankorvikejauhe ( ei välttämätön )
  • 2-3 rkl lupiinijauho
  • 1 dl tapiocatärkkelys
  • 2 rkl chian siemeniä
  • 1 tl ruokasooda

 

OHJE

 

  1. vaahdota voi ja sokerit
  2. lisää pikkuhiljaa muut ainesosat
  3. sekoita taikina yhteen
  4. jaa taikina tasakokoisiin osiin
  5. pyörittele taikinapallot ja laita väljästi pellille
  6. paista 12- 15 min 180 C
  7. jäähdytä ja valuta suklaasulalla ( voit käyttää raakasuklaareseptiäni tai käyttää kaupan sokeritonta suklaata )
