Crispy and Fluffy Waffles (glutenfree, paleo, refined sugarfree, vegan )

Waffles …. everyone of us knows the smell of freshly ironed waffles. Those deliciously crisp golden waffles… little fluffy in the middle. Perfect with a dribble of maple syrup.

There are a few things you should know before you can enjoy those crispy fluffy waffles. Sure you can just mix all the ingredients together for a quick fix but if you want to take the waffle game to the next level continue reading my recipe.

I bought my waffle iron about six months ago. The last time I used one of those was over thirty years ago so I was very eager to use it after all these years.

What can I say! The waffle iron looks exactly the same as back in the days.

No changes at all. How can that even be possible these days?

Ingredients

Batter

 

Make sure all your ingredients are room temperature

 

1 cup almond milk

2 organic eggs ( for vegan version use 4 tbsp aquafaba)

1/2 cup plant based yoghurt

1 cup gluten free flour mix ( all-purpose, rice , coconut, almond and cornmeal)

2 tsp baking soda

1/2 tsp salt

1/2 tsp vanilla bean powder

1 tbsp coconut sugar

50 g melted butter ( melted coconut oil for vegan version )

  1. Separate egg whites from the yolk (beat them to stiff peaks)
  2. Mix the yolks with the liquids
  3. Add the flour mixture and the rest of ingredients ( don’t blend too much)
  4. Add the stiff egg whites carefully into batter

 

Let the batter set for  5-10 minutes. After that you’re ready to cook the waffles on the hot iron.

If your waffles don’t turn out crispy enough let the waffle rest on a wire rack so the steam can escape on all sides. Just like you do when toasting a sandwich.

Serve as soon as possible.

 

Using a little bit of cornmeal in the batter makes the waffles extra crispy outside so I really suggest you to try it!

 

Yoghurt is a substitute for buttermilk in the batter. It gives the waffles the airy , light and fluffy texture. And the taste is also much better .

 

Beating the egg whites also gives a better texture to these waffles but you can skip that if you don’t feel like doing that.

 

Im the biggest lover of maple syrup so if you ask me what’s my favorite waffle topping I would say a thick maple syrup glaze!

 

My daughter loves nice cream so I decided to make some nice cream cones out of my waffles. She loved them! I made the nice cream from frozen blueberries, banana, coconut cream,plant based yoghurt, cinnamon and vanilla. Works every time!

 

AINESOSAT

 

1 cup mantelimaito

4 rkl aqua faba

1/2 cup kasvipohjainen jugurtti

1 cup gluteeniton vaalea jauhoseos

2 tl ruokasoodaa

1/2 tl merisuola

1/2 tl vaniljajauhe, aito

1 rkl kookossokeri

3 rkl kookosöljyä sulana

 

OHJE

  1. sekoita kuivat aineet märkiin ja
  2. anna taikinan turvota 10 min
  3. paista vohvelit kuumalla pannulla
  4.  saadaksesi rapeat vohvelit anna kypsien vohvelien jäähtyä hetki ritilän päällä
  5. voit halutessasi paistaa taikinan pannulla uunissa 180C N.15- min, kunnes kullankeltainen
  6. (voit lisätä halutessasi taikinaan suklaapaloja )
