Eggplant Pizza Snack ( gluten free, paleo, vegan, low carb )

Let’s talk about eggplant a little. Im a huge fan of those dark purple aubergines. I love them fried, roasted, grilled you name it I’ll eat it.

 

I know some people have struggled with cooking eggplants. The result has been something else that was visioned. Don’t worry about that anymore. You can enjoy this great vegetable with  unique taste and texture, after reading my tips.

 

PREPARING/ COOKING TIPS FOR EGGPLANT

 

  1. Skin is edible and full of nutrients so no need to peel it,unless wanted
  2. Remove blemishes and dark spots they only taste bitter
  3. Cut into slices, cubes or whatever shape your dish requires
  4. Salt ( or not ) you can be the judge of that. Salting draws out the juices and therefore firms up the flesh. Bitter taste found especially in large, non organic, older aubergines, can be removed like this.
  5. If you salt this fruit vegetable do it generously on your sliced or cubed eggplant. Let it set at least 30 min. Rinse and wipe the eggplant thoroughly before cooking.
  6. You can roast, grill, fry, stir-fry, or make fries or stew
  7. If you choose to fry remember this. Don’t overload your hot pan. Don’t count the calories of the oil you are adding to pan. This dish needs the additional fats. The rich creamy taste comes alive with oil.
  8. If you roast your eggplant like I did in my recipe you can brush the slices with olive oil.  Flip them around once while roasting.
  9. When grilling  use the same technique as roasting requires
  10. If you make fries, you  just roll them in breadcrumbs and fry
  11. For stew you can just add the eggplant chunks  and toss them around on oil and spices.

Eggplant pizza snacks are great substitute for a pizza, especially on week day. You just have to get veggies on your plate more so I made it easy for you! You can top the snacks with your favorite things, add a little cheese or meat…  And  just roll the slice and tuck it in! So creamy and delicious.

Ingredients

 

1 eggplant

sea salt,  herbs

extra virgin olive oil

toppings of your choice

 

INSTRUCTIONS

 

  • cut your eggplant into slices, 3-4mm
  • salt the slices generously, let set 30 min, drain and wipe thoroughly to firm up the flesh
  • brush the slices with oil, both sides. Sprinkle some dried herbs like oregano, basil and some pepper too
  • put the slices on a baking sheet lined with a baking paper
  • Roast 190C for 15-20 min. Flip them around once while roasting. Don’t overbake them. You don’t want them to be too mushy.
  • if you prefer warm toppings  add them after 15 min of baking and put the slices back to oven.
  • when the slices are roasted enough take them out and add fresh toppings of your choice

 

This is my example for a healthy meal enjoyed on a week day. We can have a proper pizza on weekend then, hahahaa!

Use your favorite toppings  or whatever you can find in your refrigerator. The important thing is you love it and enjoy the food you are eating! Don’t ever forget that my friends!

 

 

AINESOSAT MUNAKOISOPIZZA

 

1 kokonainen munakoiso

suolaa, yrttejä, pippuria

neitsytoliiviöljyä

täytteet maun mukaan

 

OHJE

 

  • pilko munakoiso pitkiksi viipaleiksi
  • suolaa palat reilusti, anna olla 30 min, huuhtele ja kuivaa hyvin. Tämä kiinteyttää hedelmälihaa ja poistaa mahdollisen kitkeryyden ( vanhoissa, isoissa varsinkin ei luomu munakoisoissa )
  • sudi viipaleet öljyllä molemmin puolin ja ripottele oreganoa , basilikaa ja mustapippuria siivuille
  • laita viipaleet pellille jossa on leivinpaperi
  • paahda 190 asteessa noin 15-20 min. Käännä kerran paiston aikana. Älä kypsennä liian muusimaiseksi
  • jos haluat lämpimät täytteet lisää ne vartin paiston jälkeen ( ja takaisin uuniin ) muutoin voit lisätä täytteet kun viipaleet ovat täysin kypsiä.
  • voit käyttää haluamasi täytteitä kasvisten lisäksi.
