Gluten free High Fibre Bread ( gluten free, vegan ,dairy free, egg free )
The smell of freshly baked bread. Everyone knows what Im talking about. Right?
It’s comforting, homely and undeniably delicious.
There are multiple studies that show that the smell of freshly baked bread has positive effects on people. I t makes us nicer to people. Generally speaking this pleasant smell makes us feel happier.

2 1/2 cup lukewarm water
12 g fresh yeast
1 1/2 tsp seasalt
4 tbsp sugar beet fibre flakes
2 tbsp grounded flax seeds
4 tbsp oat bran
1 tbsp potato fibre
2 tbsp psyllium
4 tbsp tapioca starch
2 cups glutenfree all purpose flour
Place yeast ,salt and water in a bowl and whisk until yeast has dissolved.
Add the rest of ingredients to the bowl and mix, except for the gluten free flour.
Let the mixture set for 10 min.
Add the gluten free flour.
Mix everything well and knead in order to make the dough softer.
( even if this is gluten free dough it gets better when kneaded )
After this shape a loaf or two as I did.
You can use a pot for that it helps the bread rise high.
Let the bread swell well 30-60 min.
Bake 45 min or more at 180 celsius depending on the size of your bread(s)
