Glutenfree Berry Pie with a Juicy Filling (gluten free, vegan, paleo, dairyfree, refined sugar free ,egg free)

I created this recipe about six months ago and it’s the most easiest and quickest pie I have ever made in my life, it’s definitely one of the most scrumptious also.

The filling is full of fresh juicy berries. Nothing else.

My almost seven year old daughter says this pie is not good but it’s super duper delicious. I think that is the most greatest any trustworthiest opinion I could ever get on my bakings.

She has grown to be a a little food critic who is very analytic on her opinions so I value her sayings. Usually I get the best criticism on my batters and doughs which she always eats straight from my kitchen bowls. She loves to eat raw dough, but hey who doesn’t.  We all have our childhood memories where you just stare at your mom whisking the batter and you’re waiting impatiently her to be ready and letting you lick the beaters of the mixer.

Ingredients

Crust

1/2 cup gluten free all purpose flour

1/2 cup almond flour

1 tbsp chia seeds

pinch of salt

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp vanilla bean powder

1/3 tsp xanthan

1/2 tsp cardamom

1/4 cup coconut sugar

1/4 cup coconut oil

1/4 cup high fat coconut cream

 

Mix everything together into a batter.

Press in an oiled  baking tin. I used a teflon coated baking tray so a little bit of coconut oil  did the job well.

 

Filling

2 cup mixed berries used blueberries, raspberries and blackberries.

1 1/2 tbsp potato or tapioca starch

1 1/2 tbsp coconut sugar

1/4 tsp cinnamon powder

 

Mix everything together carefully and pour on top of  the dough.

Bake in 180 celsius for 40 minutes .

 

The crust is a little bit crispy but very very soft and full of pleasant flavour.

I have one warning concerning this pie. This pie disappears more quicker from the kitchen counter than you are able to say ‘pie’ .

So be sure to get your share of it or just double the recipe to be on the safe side.

      Moi Mira!Reseptissähän on ksantaania hyvin pieni määrä kuten yleensäkin murotaikinoissa, joten varmasti toimii myös psylliumilla!
