Quinoa Butternut Squash Patties (vegan, dairy free, egg free, paleo, gluten free )

I’ ve been making veggie patties all my life. On my early twenties when I was a vegan for several years. I used to cook patties all the time. I tried every possible ingredient I could get my hands on. Vegetable cakes have stayed a staple in my diet ever since. If you love quinoa like I do and butternut squash you are going to love these patties.

 If you can’t get butternut squash from your grocery store use sweet potato. If you have cooked potatoes in your fridge toss them in the batter to give some creamy, buttery and earthly flavour. In any case you are going to fall in love with these healthy tasting cakes.

Ingredients

1 cup quinoa cooked in water

1 small butternut squash ( baked in the oven for 1 hour, flesh spooned out and mashed )

1 shallot cubed

2 handfuls of kale and spinach thinly sliced

4-5 tbsp glutenfree all purpose flour

3 tbsp chia seeds

1 tsp pumpkin spice

2 garlic cloves

1/2 tsp turmeric

salt and pepper to taste

 

Mix everything together and

shape into patties.

If you prefer thin patties feel free to

dab them as thin as you like!

Panfry on both sides until golden brown

 

 

Herby cream sauce

 

1/4 cup cashews soaked in water overnight

1/4 cup oat creme fraiche

3 tbs nutritional yeast

1 tsp tahini

1/4 tsp paprika powder

fresh basil and thyme leaves

squeeze of a lime

salt and pepper to taste

water to make it runnier

 

Blend all the ingredients with a stick blender until smooth and airy.
