Thin and Crispy Pancakes ( gluten free, sugar free )

Traditional Finnish pancakes are thin and crispy on the edges. They are more like crepes than pancakes.

Children flip over pancakes.

I think many adults do that too but they just don’t show it.

What more is there to say? Let’s all flip together over this great dessert!

Pancakes are versatile. You can have them as a dessert or make a whole meal out of them or just a snack.

You can stuff them with your favorite ingredients, sweet or savory or you can

add grated vegetables in the batter. Either way you are going to love them!

INGREDIENTS

 

  • 1/2 cup  buckwheat flour
  • 1/2 cup gluten free flour mix
  • 1 3/4 cup milk of choice
  • 1 tsp sea salt
  • 1 tbsp walnut or other vegetable oil
  • 2 organic eggs

 

INSTURUCTIONS

 

  1. mix the flours and salt
  2. add the milk
  3. mix well (no lumps wanted )
  4. add the eggs and oil
  5. let the batter set 10 min
  6. fry pancakes on a greased pan

 

 

AINESOSAT LETUILLE     1 cup = 2,4 dl

 

 

  • 1/2 cup tattarijauhoa
  • 1/2 cup gluteenitonta jauhoseosta ( Semper grov mix )
  • 1 tl hieno merisuola
  • 1 3/4 cup maitoa valintasi mukaan
  • 1 rkl kasviöljyä ( käytin saksanpähkinäöljyä maun takia )
  • 2 luomumunaa

 

OHJE

 

  1. sekoita maito jauhoihin hyvin
  2. lisää munat ja öljy
  3. lisää suola
  4. anna taikinan turvota 10 min
  5. paista lätyt keskikuumalla pannulla voissa tai öljyssä
